Eggplant Ettouffee

1 large eggplant (peeled, diced and boiled)  DO NOT DISCARD WATER AFTER
BOILING
1 pound smoked sausage (diced)
1 pound shrimp peeled and boiled
1 lagre bell pepper (green) diced
1 large whiite onion 9Diced)
1 clove garlic (diced)
1/2 bunch parsley (diced)
1 cup flavored bread crumbs

sautee smoked sausage in large skillet,  Add bell pepper,onion, garlic and
parsley.  saute, stirring constantly.  Once all ingredients in skillet are
soft, add shrimp and eggplant.  Stir to mix thoroughly.   Add bread crumbs
and 1 cup of water from eggplant to moisten.  Mix well.  Continue to add
bread crumbs and water until desired consistency is achieved.  Salt and
pepper to taste and serve. Water from boiled eggplant gives the dish a
special flavor.  Even if you don't like eggplant you will like this because
the flavor of the eggplant is disguised by the other ingredients, especially
the flavore (Italian) bread crumbs.
